  • 1 cup fine fresh bread crumbs
  • 1/2 cup Parmesan cheese
  • 3 cloves garlic, minced
  • 3 tablespoons finely chopped flat-leaf parsley
  • 1 tablespoon finely chopped fresh mint
  • 1 1/2 teaspoons minced fresh rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 1/2 tablespoons olive oil
  • 2 racks of lamb (8 ribs and about 1 1/2lbs each rack) frenched (Ask the butcher to french them for you as it can take a bit of work) and cut in half with 3-4 bones per serving.
  • 2 tablespoons Dijon mustard
